Fancy & satiating
Following up on my cooking-related subject, I want to share with you the recipe for a very easy to prepare and really yummy dinner. No meat in here, obviously!
Today in our kitchen we’re having peppers stuffed with millet, mushrooms, courgette and onion.
Oh, and a bit sad info for students living in rented flats: unfortunately, you need an oven to prepare this one!
This is a serving for 3 people or 2 very hungry individuals.
Time: around 40 minutes, but it’s worth it!



Ingredients:
3 peppers (the color doesn’t matter, I’ve tested it with red pepper but also with green, I bet that yellow one is as tasty as the others)
0,5 glassful of millet
1 onion (regular size)
20 dkg of mushrooms
1 clove of garlic
0,5 courgette
1 can of tomatoes or 4 fresh & diced tomatoes
0,5 teapoon of chilli (be careful with this one πŸ˜‰ )
1 tablespoon of oil
2 tablespoons of parsley
A pinch of salt & pepper
Of course, you can improvise with spices by adding rosemary for example.
How to prepare it?
1.       Follow instructions on the box and cook the millet. Generally, you put it into boiling water for about 12 minutes. Add some salt.
2.       Chop finely onion and garlic. Wash mushrooms and then peel them and dice. Cut the courgette into small slices, you can do the halves of slices, too.
3.       Heat a tablespoon of oil on the pan. Fry the onion and mushrooms. Add some salt and pepper and fry till mushrooms get a bit brown. Add garlic (smashed it with garlic press) and courgette. After a while add also tomatoes and chilli. Simmer it for around 10 minutes. Then add the millet and parsley, mix it carefully with spoon.
4.       Set the oven at 190 degrees.
5.       Cut the peppers in halves and remove the cores. Rinse it thoroughly. Sprinkle with salt and add a little oil. Put your filling inside the peppers.
6.       Put it on a baking tray. Bake for around 25-30 minutes. (Sometimes peppers are ready just after 20 minutes, so keep an eye on it.)
You can serve it with tomato or garlic sauce, as you prefer 😊

My cooking experience (2)

I think that my survival instinct had a great impact on my mobilization to continue cooking. I just had to eat something. Moreover, now I’m forced to cook for myself almost every meal, because with my decision to become vegetarian came also the end of taking food from home. OK, maybe the tomato soup is still in my suitcase everytime I come back to PoznaΕ„. However, I think that these circumstances helped me a lot to develop my knowledge and change my eating habits. In the past, I didn’t use to try new dishes and flavors, because I was assuming that I wouldn’t like it anyway. Now I love to take a little risk and spend some time in the kitchen preparing something new or a bit extraordinary. The vegetarian diet makes you use various products and solutions which may seem odd at the beginning. For example: green parts of carrots (no idea how to translate it more accurately) plus oil and sunflower seeds gives you a tasty pesto! Recently I came to the conclusion that I’ve started to like cooking very much and I even find it relaxing in some way.
Challenge yourself and try to eat something you’ve never tried before. The worst thing that can happen is that you will not like it. But it is much more likely that you will love it!
